Basically, you make all of the layers separately and then serve it stacked up in a bowl or plate. Because of my busy day, I made this in the early afternoon and then put it in the crock pot in the layers and dished it up from there--
Layer 1--Coconut Rice
Make rice and for the liquid use equal parts water, veggie broth, and coconut milk
Layer 2--Indian Lentils
Saute onions and garlic in olive oil. I did two onions and two cloves of garlic. Once they are soft, add in a Tablespoon each of curry, cumin, turmeric and a shake of ginger. Add a bag of lentils and veggie broth to cover and then bring to a boil, down to simmer and cover and cook for 30 to 40 minutes checking regularly to make sure the water hasn't boiled off.
Layer 3--Sweet Potatoes
Cube 4 sweet potatoes and toss in coconut oil, olive oil, salt and pepper. Roast at 425 for about 45 minutes.
Layer 4--Caramelized onions
Slice 4 onions (or more) and cook low and slow for about an hour in butter/olive oil. Be careful not to let them burn.
Layer 5--Dollop of cold, plain, yogurt
Don't add this part until serving!

This really sounds good to me right now!!
I had a good green salad the other day with black beans and roasted sweet potatoes (cubed) and feta cheese with a strong ginger dressing- weird but good. This looks yummy !
